Banana Bread

My mom would always buy the icky brown bananas that nobody likes so she’d have to turn them into a bread. This is a perfect way not to let your bananas go to waste.  I recommend to eat your slice with butter on it because banana bread always seems dry to me.

Ingredients:

  • 1¾ Cups All-Purpose Flour, sifted
  • 2¼ Teaspoon of Double-Acting Baking Powder
  • ½ Teaspoon of Salt
  • 1/3 Cup of Shortening
  • 2/3 Cup of Sugar
  • ¾ Teaspoon Lemon Rind, grated
  • 1 – 2 Beaten Eggs
  • 1 to 1¼ Cups of Ripe Banana Pulp
  • Optional ingredients:
    • ½ Cup of Broken Nutmeats
    • ¼ Cup Dried Apricots, finely chopped

Directions:

  • Preheat oven to 350 degrees Fahrenheit.
  • Sift together all-purpose flour, baking powder, and salt.
  • Blend until creamy: shortening, sugar, lemon rind.
  • Beat in egg(s) and banana pulp into the sugar mixture.
  • Add sifted ingredients in about three different parts to the sugar mixture.
  • Beat the batter after each addition until smooth
  • Optional: fold in nutmeats and/or dried apricots.
  • Place in a greased bread pan and bake for about an hour.
  • Cool before slicing.
